These are simply irresistible: Banana Muffin Bombs Three Ways. Let me tell you why three ways. Most days, it’s just the two of us the Persian Prince and I, as the kiddos have all flown the coop. However, I still like a treat now and again, and to make it more worth my while, I love to bake muffins for having today and some to keep for future snacking. Or some for breakfast and some to take to work. Which is why I make a batch but with three different fillings/toppings that make Banana Muffin Bombs. Essentially wonderfully moist banana muffins but with different fillings for a little bit of variety. This way you don’t get sick of Bananas. As if it’s going to happen.

What you need to make Banana Muffin Bombs
All really simple ingredients already in your fridge pantry.
- Fridge/Pantry- Self Raising Flour,Brown Sugar, Cinnamon Powder & Nutmeg,Butter,Egg,Vanilla,bit of Cooking Oil to make it stay moist.
- Bananas- you need about 3 or 4 very ripe Bananas for this recipe approximately 1 1/2 cups mashed.
- Optional Fillings/Toppings- Nutella, Dulce de Leche and Biscoff Spread.
Easy does it…
- Line muffin a 6 hole muffin tray with paper cases or spray with cooking oil spray. Preheat oven to 180°C(fan forced).
- Mix the dry ingredients of flour,spices and brown sugar together in a mixing bowl. Make a well in the centre of the flour, then add cooled melted butter,beaten eggs, cooking oil,milk and mashed bananas. Fold with a spatula or wooden spoon until just combined. Do not over mix.
- Use a spoon or a cookie scoop to place a spoonful of batter into each of the paper case lined muffin tray. Then add a teaspoon of your chosen filling (Nutella for example) Add more batter on top of the filling to fill the case 3/4 full . Top with a teaspoon of chosen topping (like Nutella). I usually make two of each in one batch, of Nutella ,Dulce de Leche and Biscoff. Or use just one flavour, it’s up to your preference.
- Bake for 10 minutes, then turn down the heat to 160°C and bake another 10 minutes or until golden. Serve warm or room temperature. Reheats beautifully in a microwave.
