Breakfast Pie for breakfast lunch or dinner. It has all the elements of a hearty breakfast of bacon eggs potatoes leeks and melty cheese covered in puff pastry and baked until puffed and golden.
Perfect as is but can be improved with a side of green salad and lots of tomato or BBQ sauce.

Ingredients
1 Leek, washed and sliced white part only
6 eggs
8 rashers of bacon , cut up into 1 inch pieces
Pepper to taste
Handful of grated cheese
1 sheet puff pastry to cover a 9 inch pie plate
Sliced cooked potato optional, sesame seeds optional
Directions
- Cook leeks in a small pan with a little bit of oil. Spray a nine inch pie pan with cooking oil. Place the cooked leeks in the pie pan spreading them on the bottom of the pie pan. Preheat oven to 170C.
- In the same pan, cook the bacon for about 3 minutes. Add the cooked bacon to the pie pan making sure they’re spread around.
- If using cooked potato, layer them on top of the bacon. Then sprinkle the grated cheese on top and black pepper to taste.
- Cover the pie with puff pastry, cut off excess. Use the off cuts to decorate the top of the pie.
- Brush with a bit of egg wash, and sprinkle sesame seeds if using.
- Bake for 20 minutes or until golden.
