Easy Sugar Cookies

The original recipe for these easy Sugar Cookies was given to me by a friend, back when I was just starting to bake. I wanted a cookie that was easy to make, with minimal ingredients and taste great. I have made these cookies countless of times, and have baked more complicated ones since then, but this still remains a favourite, alongside a cuppa.

Enjoy vanilla sugar cookies as they are, or decorated with toppings like sanding sugar or hundreds & thousands, iced with royal icing/fondant or topped with chocolate. That’s how versatile this cookie is. I myself, like it plain, the way I made them long long time ago, when I was a novice baker. I do use a cookie stamper to jazz it up.

What you need to make Sugar Cookies..

  • Butter – You need good quality butter for this cookie, as this doesn’t have a lot of flavourings. The better the butter, the better the cookie!
  • Brown Sugar – This gives the lovely caramel taste to the cookies
  • Other fridge/Pantry Items – Plain Flour, Pinch of Salt,Vanilla Paste & Egg
  • Optional Decorations – Sprinkle with Hundreds & Thousands before baking or put melted chocolate patterns on cool cookies.
  • Cookie Stamp,Optional

Easy does it…

Sugar Cookies
  • Cream room temperature butter and brown sugar until pale and fluffy.
  • Add egg and vanilla and mix on low speed.
  • In a separate bowl, whisk together plain flour,baking powder and salt.
  • Add the flour mix to the butter egg mixture in batches and mix on slow.
  • Turn out into the counter and form into a smooth dough. Chill in the fridge for about two hours.
  • Roll golf sized balls and place in a baking paper lined cookie sheet
  • Use a cookie stamper or similar to mark patterns on the top.
  • Bake in a 180°C preheated oven for about 12 minutes or until pale golden.
  • Cool completely before decorating or storing in an airtight container.

Easy Sugar Cookies, Makes 24

Ingredients

  • 225g butter, room temperature

  • 1 cup packed brown sugar

  • 1 large egg

  • 1 teaspoon vanilla paste

  • 2 2/3 cup plain flour

  • 1 teaspoon baking powder

  • pinch of salt

Directions

  • In an electric mixer, with paddle attachment, cream butter and sugar at medium speed until light and fluffy. Line a cookie sheet with baking paper.
  • Add egg and vanilla paste and beat another minute.
  • In a separate bowl, use a fork or a whisk to combine flour, baking powder and salt.
  • Add flour mixture to the butter in four batches, and mix on low after each addition, until blended thoroughly.
  • Turn out dough into a floured surface or silpat and knead until smooth. Wrap dough in a plastic wrap and chill in the fridge for 2 hours.
  • Fifteen minutes before baking, preheat oven to 180°C.
  • Roll into golf sized balls and press with floured cookie stamp on baking sheet.
  • Bake for 10 -12 minutes or until pale golden.
  • Cool before decorating as desired or enjoy plain.

Notes

  • Cool completeLy before storing in an airtight container.
