French Apple Tea Cake

An Apple a day….this tea cake fulfills your Apple a day requirement. It’s one of the easiest Cake to make and all the ingredients are pantry staples.I was inspired to make this French Apple Tea cake during the numerous lockdown we were experiencing due to COVID restrictions in 2020. At that time I was learning French through an APP with very little success. At least I got an A plus, according to me for making this French cake. C’est bon pour moi. That’s enough French for me, I’m better at baking.

Fruity & Simply Delicious

It’s deliciously moist warm or cold with or without ice cream. I like to make this cake with tart and crisp Granny Smith apples. Pink lady or Fuji variety is also a good option. These varieties of apples keep their shape during baking and the taste is superb for this cake.

This cake is traditionally made with rum to make the cake more flavourful, but I don’t usually have any rum in the house and I’m not going to bother in getting rum if I’m only going to use a teaspoon of it for this cake. I have made this cake lots of times, and I’ve never put rum and still it comes out quite delicious.

What you need for French Apple Cake..

  • Apples – Firm cooking apples like the Granny Smith variety are best for this recipe. Jonathon, Braeburn or Pink Lady also keep their shape.
  • From the Pantry – Self Raising Flour, Caster Sugar, Eggs, Vanilla, Butter, Salt, Icing Sugar & Cinnamon Powder

Easy does it..

  • Peel and dice apples into 1 inch pieces and microwave for a bit to partially cook them.
  • Whisk the dry ingredients together until well combined.
  • Add the wet ingredients to the flour mix and fold it thru until just combined.
  • Pour into prepared pan and bake until golden.Check at 25 minutes for doneness, depending on the oven and the size of the pan used. Turn the pan around halfway so it bakes evenly. The top should be springy when touched in the middle.

..And voila! You’ve got yourself a splendid dessert worthy of an Oh la la…tres delicieux momment.

Deliciously Moist French Apple Cake

Ingredients

  • 4 Granny Smith apples ,peeled cored diced into 1 inch pieces

  • Juice of 1 small lemon

  • 1 cup self raising flour

  • 1/3 cup sugar

  • 2 eggs, room temperature

  • 120g butter, melted cooled

  • 1 teaspoon vanilla paste, pinch of salt

  • Icing sugar, cinnamon to sprinkle on top optional

Directions

  • Preheat oven to 160°C. Spray a 23cm round baking tin with oil and line bottom with baking paper.
    In a bowl, mix together self raising flour sugar and salt. Make a well in the centre and add the melted butter in.
  • Place apple pieces in a microwave safe bowl. Cover and microwave until apples are bendy about 2 minutes. Toss the apple pieces in the lemon juice and set aside.
  • Whisk eggs and vanilla paste until frothy then add this to the flour mix.
  • Add apples to the flour mix and use a spatula to fold it in. Do not over mix.
  • Spoon into prepared pan and bake for approximately 20 minutes, turn the pan halfway so it bakes evenly and bake for another 20 or until done and golden.
  • Cool in the pan for 10 minutes and place cake in a serving plate. Dust with icing sugar or cinnamon icing sugar.
  • Serve warm or cold with cream or ice cream.
