Banana Turon (Banana Spring Rolls)

Spring Rolls is a favourite at ours and it has to be homemade, which means I always have spring roll wrappers on hand. And when I make spring rolls at home, there’s always leftover wrappers as they come in packets of 50’s. While I love spring rolls, I don’t make more than 30. It’s okay to wrap them up and re-freeze them by the way, but there’s a more delicious way of using of left over wrappers via this beloved Filipino street food snack called Banana Turon ( Banana Spring Rolls)

What is turon?

I have fond memories of eating this as an after school snack when I was growing up in the Philippines. Crispy with the sweetness of bananas and coated with Caramel. Best of all it was affordable, as Bananas is everywhere in the Philippines. So what is turon? It’s ripe bananas rolled in brown sugar, wrapped in spring roll wrapper and fried until golden. Simple and rustic but so delicious.

In the Philippines we use the firmer variety called Saba bananas. Here in Australia, you can use the smaller Sugar Bananas or any other kind as long it is ripe but still quite firm.

What you need to make Banana Turon

I like my turon to be no bigger than my thumb, so you get more crisp per bite.

  • Bananas – Choose ripe but firm bananas. Slice the bananas into finger sized strips.

  • Brown Sugar and Cinnamon. The Cinnamon is optional and is not used in the original version.
  • Spring Roll Wrappers – I prefer the small ones 12.5 x 12.5 cm square
  • Oil for frying

Wrap and Roll
  • Slice the bananas into sticks, then roll each piece in brown sugar and cinnamon.
  • Wrap in spring roll wrapper.
  • Shallow fry in oil or cook in the airfryer and serve straight away. Very simple but delicious.

How to serve Banana Turon

  • As is with a light dusting of Icing Sugar
  • Make it ala Modé with a side of Vanilla Ice Cream and Caramel Sauce
  • Drizzle with Spun Sugar. This is my favourite – Crakly caramel, crispy pastry and Cinnamon Bananas.

Shatter Crisp Banana Filled Spring Rolls

Ingredients

  • 2 Bananas, ripe but firm

  • 1/3 cup Brown Sugar

  • Cinnamon Powder,optional

  • 16 Mini Spring Roll Wrappers (12.5 x 12.5 cm)

  • Cooking Oil

Directions

  • Peel bananas. Cut in 2 equal halves crossways. Cut each half into four strips so you end up with 16 pieces.
  • Place brown sugar on a plate and mix with1/2 teaspoon of cinnamon. Roll bananas in sugar mixture.
  • Place wrapper on work surface with one corner facing you, then place one strip of banana on the lower half. Moisten the top corner with water and roll into a log completely encasing the banana within.
  • Repeat with remaining bananas and wrapper.
  • To cook with Airfryer
  • Preheat airfryer to 200°C. Spray the rolls with cooking oil spray or use a pastry brush to coat the rolls lightly with oil.
  • Place the spring rolls in one layer and cook for 4 minutes on one side. Flip the rolls over and cook for another 3 minutes. They should look golden and crispy.
  • Frying
  • Pour enough oil in a saucepan to a depth of about 2.5 cm. Heat on medium high heat until hot enough. You will see bubbles appear, if you stick a chopstick into the oil.
  • Carefully place spring rolls ( about 4 at a time) in the oil with seam down so it does not unravel. Cook about 1 -2 minutes each side until golden. Repeat with remaining spring rolls.
  • To serve
  • Dust lightly with Icing Sugar or dip in Caramel Sauce.

Notes

  • Serve warm with Caramel Sauce or with Ice Cream
