One of my absolute favourite cake back in the day was the Sara Lee Banana Cake. I would slice them into portions while still slightly frozen, then pop them back in the freezer for future snacking. I loved it for it’s simplicity and convenience. However they were discontinued in middle of the COVID epidemic. Luckily it was also around this time that I had plenty of opportunity to mess around in the kitchen. So the best Banana Cake with Cream Cheese Icing was perfected just the way I like it. Moist and tender full of banana flavour and yet light and luscious.
Wouldn’t you know, the Sara Lee Cake is back on the shelves again. I tried it and found it too sweet this time. Either the recipe was changed or my taste buds has. Now if I want Banana Cake I just make my own. It’s one of the easiest to make and very simple ingredients. Sara who??
While we’re on the topic of the best, here’s my recipe for the best Moist Carrot Cake with Cream Cheese Icing. Guaranteed the best! And if you’re mad for Bananas here’s the best Banana Bread recipe. Also if you have the time, please say hello via the comments section below, I would love to hear from you.
What you need to make the Best Banana Cake with Cream Cheese Icing…
- Bananas- You want very ripe bananas for this recipe. Ripe bananas are easier to mash and are generally sweeter and have more flavour. And you’re also putting the bananas that no one wants to eat because they’ve turned spotty, into good use.
- Fridge/Pantry – Butter,Eggs,Vanilla,Vegetable Oil, Milk, Yoghurt,Self Raising Flour,Caster Sugar, Baking Soda and Cinnamon Powder
- For the Icing, you need softened Cream Cheese, room temperature Butter Icing Sugar Mix and Vanilla.
- To decorate, I love crushed toasted walnuts scattered on top of the finished cake. Walnuts and bananas are the perfect pairing for me. Optional of course. For the photo, I also used sugar ladybugs which are cheaply available from the cake aisle of the supermarket.
Easy does it…
For such a deliciously moist cake, it’s also one of the easiest to make. Essentially, mix all the liquid ingredients together, then fold in the flour to mix. Bake and Ice.
- Preheat oven and line a 22x33cm baking tin with baking paper.
- Whisk mashed bananas with eggs, oil, yoghurt, milk, vanilla, melted butter and sugar together until smooth.
- Sift flour baking soda and cinnamon over the banana mix and use a spatula to fold them together until just combined. A few lumps is okay. Pour batter into prepared tray and bake until the top is springy and is golden brown. Set aside to cool completely.
- While the cake is cooling, make the cream cheese icing by beating all the ingredients together until smooth. So easy.
