Club Sandwich

I’ve read somewhere that the CLUB sandwich stands for Chicken Lettuce Under Bacon, but where’s the T for Tomato in that scenario and I know I wouldn’t be happy with a club sandwich without tomato. 
Anyway the club sandwich has become a favourite lunch during “working from home” lockdowns. It’s easy and quick to prepare and convenient to eat weather you’re in front of a PC pretending to work or in front a TV bingeing on Netflix.

So what goes into a club sandwich?  You need 3 slices of bread, a layer of cheese,chicken,crispy bacon, tomato and fresh lettuce. You can use any bread you have, I prefer mine white thinly sliced and lightly toasted. You also need cooked chicken. It can be leftover roast chicken, crumbed schnitzel style or at a pinch one of those sliced deli things pretending to be chicken. I have even used salami and or ham if I’m desperate.

A hearty sandwich with chicken ham lettuce tomato bacon and cheese.

Ingredients

  • 6 slices of bread

  • 4 rashers of bacon

  • 2 slices of ham

  • 2 slices of cheddar cheese

  • Half chicken breast

  • Lettuce washed ,salt and pepper, mayonnaise

Directions

  • Slice tomato into thin slices approximately 6 slices. Set aside
  • Place chicken breast flat on a cutting board. Use a sharp knife to slice the chicken horizontally into two pieces. Use a mallet to flatten the breast fillets slightly. Season with salt and pepper.
  • Cook bacon in a pan until crispy. Set bacon aside. Use the same cook the chicken fillets. Cook both sides about 3 minutes each side should be fine if the fillets are thin. Set aside.
  • Toast the bread and spread one side generously with Mayo. Top 2 slices of bread with lettuce, tomato slices . Divide bacon between the 2 and place on top of the tomato slices.
  • Place another slice of bread on top of tomato. Place cooked chicken on top, then cheese ham and top with another slice of bread Mayo side down.
  • Secure with toothpicks and slice into quarters.
