Finger Lickin’ Coca Cola Glazed Pork Ribs

Tender flavourful Pork Ribs with a mouthwatering twist-Coca Cola Glazed Pork Ribs. To borrow a certain Colonel’s words, it’s finger lickin’ good! This combines the sweetness of the world’s favourite fizzy drink with irresistible Asian flavours of ginger and soy sauce. This is sure to become a favourite as it’s super delicious and also very easy to make.

I never knew Coca Cola Ribs existed until my recent trip to Bali. Out there in beautiful Ubud, there’s a restaurant called Warung Pondok Madu, that’s famous for their ribs. While all of their ribs were good, (Curry, BBQ Original, Peanut Sauce to name a few ) for me the stand out was the Coca Cola Ribs. A little bit sweet, a little bit salty , so very succulent and with a hint of spice. So while I can’t visit Bali every time I’m craving for Coca Cola Ribs, I had to improvise and try to recreate the recipe at home. The result was amazing and I’m happy to share this deliciousness with you. Pretty close, if not better than the one I tried at Pondok Madu.

It’s all about the Glaze!

What you need to make Coca Cola Glazed Pork Ribs

  • Pork Ribs- You need about 300g of Pork Ribs per person. To prepare the ribs , remove the excess white membrane and cut into serving pieces about 2-3 ribs per piece. You can also leave it whole, but because it is sticky messy, I prefer to have it in smaller pieces.
  • Pantry – Onion Garlic,Soy Sauce,Paprika, Brown Sugar, Ginger and a 375ml can of Coke.
  • For the Glaze, you need the strained liquid the ribs where cooked in, Sweet Chilli or Tomato Sauce and your favourite BBQ Sauce.

Coca Cola Pork Ribs
The not-so secret ingredient is good old Coke.
  • Begin by cooking the ribs with Coke and the aromatics , until the meat is tender. You can either do this in a slow oven or in a slow cooker- about 3 hours on high or 7 hours on low.
  • Transfer the cooked ribs into a baking tray and set aside. Strain the cooking liquid into a small saucepan then add the sweet chilli and BBQ Sauce. Cook on high until boiling, stirring now and again until the sauce is slightly thickened. Reserve half of the sauce for serving. Baste the ribs generously on both sides with the sauce and bake at 180°C until the ribs are slightly charred on the edges about 25 minutes.
  • Alternatively, you can also cook the ribs in a BBQ grill or hot plate, basting with the sauce frequently. Serve hot with the extra reserved sauce.

Tender fall apart Pork Ribs with Sticky Coca Cola Sauce

Ingredients

  • 2 kilo Pork Ribs

  • 1 onion, sliced

  • 1 teaspoon garlic,minced

  • 1 teaspoon Paprika

  • 2 pieces Bay Leaf

  • 3 tablespoons Soy Sauce

  • 3 tablespoons Brown Sugar

  • 1 small thumb sized ginger, grated

  • 1 can 375ml Coca Cola

  • BBQ Glaze
  • 1/4 cup Sweet Chilli Sauce or Tomato Sauce

  • 1/4 cup BBQ Sauce

  • Chilli Flakes, to serve if you want it spicy

Directions

  • Preheat oven to 150°C. Remove excess membrane from the ribs and cut up into serving pieces, approximately 2-3 ribs per piece. Combine paprika ginger sugar soy sauce and garlic and smear on the ribs all over. Place a piece of foil(enough to line the pan and enclose the ribs )in a baking pan . Then lay a piece of baking paper on top of the foil. Place the ribs pieces on top of the baking paper, then pour the cola over the ribs. Scatter the onions and bay leaves on top. Place another piece of foil to cover and crimp the edges together to seal. Essentially you’ve created a sealed bags with the ribs inside.
  • When the ribs are tender, remove them from the cooking liquid and place in a baking tray. Set aside.
  • Strain the cooking liquid into a small saucepan. Add the Sweet Chilli/Tomato Sauce and BBQ Sauce to the pan and bring to a boil. Cook stirring now and again until thickened slightly. Set Aside.
  • Brush the ribs with the BBQ glaze from step 3 and bake in a 180°C oven for about 25 minutes or until slightly charred at the edges, brushing with the more glaze at halfway mark. This final step can also be done in a BBQ , by cooking in a preheated grill or hot plate until warmed thru and starting to char at the edges.
  • Serve with extra Coca Cola Sauce, Coleslaw and Potato Wedges or even with Rice.

Notes

  • The ribs can be prepped ahead till step 3. Store in the fridge, then bring to room temperature before cooking in the oven or BBQ.
