Sheet Pan Cookies

I love to cook, but washing up not so much, which is why I am a big fan of one pan/one pot meals. These Sheet Pan Cookies are easy and quick to put together and best of all you get four different kinds in one sheet pan. Delicious and convenient if you can’t decide what type of cookie to make and yes it saves on washing up too. So it’s a big win for me.

The cookies itself are buttery and on the side of chewy. With four different flavours in one sheet pan bake, the hardest part is choosing which one to try first. My favourite is the crispy edged outer corners!

What you need for Sheet Pan Cookies

  • Fridge/Pantry- Butter,Caster Sugar,Light Brown Sugar,Vanilla Paste ,Plain Flour, Baking Soda and an Egg.
  • Add in’s- Cocoa Powder and Chocolate Chips, Cherry and White Chocolate,Caramel Squares and M and M’s.

Easy does it…

  • Make the base cookie dough by mixing butter vanilla and sugar until pale and fluffy. Add egg. Mix in the flour and baking soda and mix on low until just combined, then divide the dough into 4 portions.
  • Into each dough portion, mix in half of the add in’s, then place the dough in one corner of the pan. Top with half of the add in’s. Repeat with remaining dough, each time adding half of the flavours to the dough and topping it with the remainder.
  • Bake until golden about 25 minutes. Cool and cut into portions approximately 24 squares.

One Pan Four Ways Cookies

Ingredients

  • 250g butter, softened

  • 3/4 cup light brown sugar

  • 3/4 cup caster sugar

  • 1 teaspoon vanilla paste

  • 2 1/4 cups plain flour

  • 2 Eggs

  • 1 teaspoon baking soda

  • Chocolate Chip
  • 1 teaspoon cocoa powder

  • 60g Choc Chips(milk or dark or combination)

  • Macadamia & White Chocolate
  • 50g Macadamia,roughly chopped

  • 50g White Chocolate,coarsely chopped

  • Caramel
  • 50g Caramel Squares,roughly chopped

  • 25g Walnuts, roughly chopped

  • M & M’s
  • 50g Packet M & M’s

Directions

  • Preheat oven to 160°C. Spray a 23x33xcm baking tray with cooking spray and line with baking paper.
  • Place butter, sugars and vanilla paste in a mixing bowl and beat on medium until pale and fluffy. Add egg and beat to incorporate then add flour and baking soda and mix on low until just combined. Do not over mix. .
  • Divide the dough into four portions about 200g each.
  • Add cocoa powder and half of chocolate chips to one of the dough and knead to mix them in. Place the dough in one corner of the prepared tray and press down until it fills a quarter of the tray, right to the edge. Scatter the rest of the chocolate chips over the dough.
  • For the Macadamia and White Chocolate quarter, mix in half of the white chocolate pieces and nuts through one portion of dough, then place dough in the corner beside the chocolate chip dough, pressing it in right to the edge. Scatter the rest of the white chocolate on the top. The tray should now be half filled with cookie dough with two more portions to go.
  • Repeat with the remaining two dough portions, each time mixing in half of the add-in’s through the dough and pressing it on one quarter of the tray, and topping with the other half add in.
  • Bake for about 20 minutes or until golden. Remove from the oven and set aside for about 10 minutes before cutting into serving pieces. Cool completely before storing the cookies.

Notes

  • Will keep for a week in an airtight container.
