Lemon Lime & Orange Madeira Cakes

Here in Sydney, we might be far from the island of Madeira ( it’s situated between Morocco and Portugal) , but there is no reason why we can’t enjoy these mini Madeira loaf. The Madeira cake is actually British and is usually a butter pound cake flavoured with lemon or any kind of citrus.

Long time ago, it was served with Madeira wine , now it’s mostly served with tea or coffee. Although I don’t mind Madiera wine (an aged fortified variety) I actually prefer to have the cake with tea.

Ingredients

  • 250g butter room temperature and cut into cubes

  • 2/3 cup caster sugar

  • 3 eggs room temperature

  • 1 3/4 cup self raising flour

  • Juice of one lemon

  • Grated zest of 1 lemon 1 lime 1 orange

  • Lime Syrup
  • 1/2 cup icing sugar

  • Juice of 1 lime or 1 orange

Directions

  • Preheat oven to 160C . Spray loaf pan with oil (5 x 8 inch or similar) or 8 hole mini loaf pan
  • In a mixer on medium speed, beat butter and sugar together until light and fluffy. Add eggs one at a time and beat after each addition.
  • Add zests and lemon juice. Fold in flour and mix until just just combined. Pour batter into prepared loaf pan or divide equally among the mini pans. Sprinkle to with extra caster sugar.
  • Bake for 20 minutes or until done. Cool in pans before turning out.
  • Pour lemon glaze on top of cooled cake.
  • Lime Syrup Glaze
  • Place icing sugar in a small bowl. Add half of the juice and mix. Keep on adding juice by spoonful until glaze consistency is reached .
