The Ploughman’s Lunch

Life’s too short to have a boring lunch even in lockdown. Something simple but definitely not boring. The Ploughman’s Lunch (or deconstructed sandwich) has boiled eggs, some cold cuts bit of salad greens and some pickles.

At the start of lockdown, I made a mixed vegetable pickle which we’ve christened Gladys’s Pickles in honour of Gladys Berejiklian who is a constant presence in our lives here in Sydney during lockdown.

Cold cuts to use are some sliced ham, salami, thinly sliced prosciutto and here I used mortadella with olives. I think you need a sturdy bread to go with it, preferably toasted like sourdough or rye. White bread is also okay if that’s what you’ve got.

Ingredients

  • 4 slices of bread any kind

  • 4 slices of mortadella

  • 2 slices of hard cheddar cheese

  • 2 hard boiled eggs

  • Mixed lettuce and pickles

Directions

  • Boil eggs about 9 minutes
  • Toast and butter bread
  • Arrange mortadella slices on a platter. Place mixed lettuce around the mortadella. Add the bread
  • Serve pickles separately on a small container. Enjoy

Notes

  • Any cold cuts can be used in place of mort
